The luxury artichokes reinterpreted and embellished with winter and summer truffles from Provence.

The recipe

The artichoke is one of the oldest vegetables grown in France. Green or purple, it gives its name to typical recipes from the south of France, such as artichokes or artichokes à la barigoule. In this new recipe, artichoke hearts are cooked with Provençal herbs, as well as a blend of Tuber Melanosporum winter truffles (60%) and summer truffles (40%).

The cream is lightly mixed to preserve all its "lamb's lettuce", thus obtaining a textured creaminess in the style of the great chefs.

How to use it

This artichoke cream with truffle is delicious on toast as an aperitif! The artichoke with a bit of bush can also be mixed with farfadelles or deliciously garnished with cannelloni or pasta to stuff. At the aix&terra table, it is notably cooked with ravioles from the Drôme, a delight!


Artichokes (54%), olive oil, onions, lemon juice, broken truffles ((Tuber melanosporum) (3%), (Tuber aestivum) (2%)), mustard (mustard seeds, spirit vinegar (sulphite), water, salt), garlic, parsley, salt, mint, truffle flavouring, pepper. Keep in a cool place after opening.
